Celebrate National Watermelon Day with Watermelon & Tomato Ceviche

Today’s KTLA 5 Live segment featured Studio Chef de Cuisine Benjamin Martinek demonstrating his Watermelon & Tomato Ceviche dish to celebrate National Watermelon Day on August 3. The summer dish is a combination of watermelon and heirloom and cherry tomatoes, Serrano chili and charred lime from the 1,000-square-foot Studio garden’s harvest.

Recipe:

Watermelon and Tomato Ceviche with Serrano Chili and Charred Lime

Serves 10

Ingredients:

1 pound watermelon, diced

2 heirloom tomatoes, seeded and diced

1 basket cherry tomatoes, quartered

5 limes, halved and grilled

1 medium shallot, minced

1 Serrano or Jalapeño, sliced

1 bunch cilantro picked

2 tablespoons extra-virgin olive oil

Salt to taste

Method:

Mix the tomatoes and watermelon with the cilantro. Juice the charred limes over the salad and season with salt to taste. Finish with the olive oil.
