Celebrating National Grilled Cheese Month


The Loft at Montage Laguna Beach’s Chef de Cuisine Michael Campbell will put his own spin on the classic grilled cheese sandwich this month. Every Monday a new sandwich will be introduced, with a new twist to the savory classic that’s loved by all ages.

Campbell, whose menus at The Loft have been carefully created to utilize familiar ingredients and reintroduce them in a way that is imaginative and memorable, says he’s using this national holiday “as an opportunity to take a dish that most know and love, and have a little fun with it. My menus already take an inventive perspective on familiar cuisine,” he says, “so we’re excited to see how guests respond to interesting twists on the classic grilled cheese sandwich.”

Expect these grilled cheese sandwiches to be rolled out on Mondays in April:

  • April 3: Monterey Jack Cheese with Pickled Fresno Chili and Aleppo Pepper on Sourdough

  • April 10: Goat & d’Affinois Cheeses with Fig Mostarda on Brioche Hoagie

  • April 17: Swiss & Gruyere Cheeses on Caramelized Onion Park House Roll

  • April 24: Fried Green Tomato, Bacon Marmalade & Smoked Cheddar on Sourdough
